New Mexico - Land of Enchantment

New Mexico has much to offer for the RV enthusiast and outdoors person considering the Rocky Mountains spans almost the entire west side of the state. Therefore, if you love hiking, trail riding, kayaking, hot mineral springs, birding, riding in a hot air balloon, breathtaking landscapes, art, music and dance as well as the heritages of Indian, Anglo and Hispanic cultures, then you'll love The Land of Enchantment.

Below is an ongoing list of popular RV Parks in the state. I will add them in as I find them, therefore, the parks are categorized into,

* Northwest

* Northeast

* Southeast

* Southwest

That way if you are traveling from Colorado or Texas, you can easily find which part of the state these RV Parks are. I've also selected parks that are close to National and State Parks.

In 1935, the state tourism director designed a brochure using the tag line of 'The Land of Enchantment.' That same year, New Mexico Magazine started advertising using the slogan."

How to Get The Most Out of Your RV Experience

Less is Better

As a full time RVer, I have learned a lot over the past year. However, there are some things to remember about this lifestyle.

1. You can't take everything with you! You have to pare down. If you are packrat, you may be in for a rude awakening. If this is just a vacation home, you still can't take everything with you. You are out to explore the country. Leave the TV at home. But, bring lots of reading material.

2. Buy lightweight dishes. ie; plastic plates, cups or anything plastic. Glass is too easily broken and plastic may help your gas mileage.

3. Always brings lots of flashlights. Small ones and large one and of course, all of the batteries that go with them.

4. Clothes pins and towels to be used as rags. You just never know when either of these items will come in handy.

5. Extension cords or outlet strips. RV's never seem to have enough outlets so stock up.

Pizza For The Road

Ahh, living a simpler life

For years I have been leaning more toward eating more as a vegetarian and this lifestyle is much easier when you don't have to cook.

However, I still have favorite cooked foods that I am not totally willing to let go of. Pizza.

Here is my favorite pizza recipe.

I buy prepared crusts such as Boboli or any prepared pizza crust will do.

Instead of spreading tomato sauce as the first layer, I use Brianna's honey mustard salad dressing. I've tried other honey mustard's, but this brand has the best flavor.

Then throw on feta or mozzarella cheese for the first layer.

Add slices of green pepper, roasted chicken strips, onion and mushroom.

Top with more cheese. Cook for recommended time. Yummy!
